i'm getting ready to carve my jack-o-lantern, and i'm going to waver from my traditional salted pumpkin seeds this time. the dilemma? what to season them with!?!

so here's the annual "what do you like on your pumpkin seeds?" thread.

I've never tried it, but I was just thinking that sprinkling some ground chipotle pepper would be yummy. But a little would go a long way!

I use one teaspoon cayenne, 1/2 tsp. cumin and 1 tsp salt mixed with 1 tbsp. olive oil...then bake for about 30-45 minutes. that's for about two cups of seeds. yum!

I like this recipe but I double the spice, I really like them spicy! I also added some ground coriander seeds and ground ginger.

It's a bit complex to make, but delicious --

A Mexican sauce you can use on any meat or fish (or just to dip stuff in, mm!) that's based on toasted pumpkin seeds that you then blend with tomatillos, stock, etc.

WARNING: not for vegetarians! (although you could substitute veggie stock and put this on tofu, it just wouldn't taste the same.)

We went to a dinner party last night that served the BEST roasted pumpkin seeds I have EVER tasted. They seasoned them with vinegar and salt, roasted until cooked but not browned, and then did some olive oil for the final browning.

They taste like scrumptious salt and vinegar potato chips - incredible.

We carved our pumpkin over the weekend and took the seeds, salted them, and this year we put cajun seasoning on them with a dash of hot peppers. It was surprisingly delicious!
