haha I'm lazy, so I'd buy a container of mint chocolate chip or pistachio ice cream (if you eat dairy).
but since I'm guessing you're not nearly as lazy as I, maybe you could make yellow or white cupcakes and add green food coloring? You could also add food coloring to the frosting, if you want.
Perhaps you could get a heart-shaped cake pan and use that to make petals for a shamrock cake!
Sorry I don't have any recipes, but maybe those ideas will get you started!
    Good luck!

    My family loves this dessert:

    Green Fluffy Stuff

1 12oz container of Cool Whip
1 20 oz can crushed pineapple, undrained
1 3 oz package instand pugging, pistachio flavor

Combine all three ingredients in a large boal and stir gently until thoroughly combined. Chill in refrigerator for 2-3 hours.

    It's yummy.

One that I love, and recently made for a Progressive Student Alliance potluck is actually quite similar to SparklingAllisons Green Fluffy Stuff recipe. I add chopped walnuts, mini marshmallows, and coconut though. It's sooo good.

Here's one I just saw in the paper today:

    Lucky Lime Pie

    1 (12-oz) can frozen limeade
1 (14-oz) can sweetened condensed milk
    1 cup sour cream
    1 (9-oz) container cool whip
    green food coloring
    2 ready-made graham cracker crusts
    2 limes, sliced

    - Mix together limeade and condensed milk.
    - Add sour cream and cool whip. Stir until smooth.
    - Stir in several drops of green food coloring. Pour half the mixture into each pie crust.
    - Arrange 4 slices of lime on each pie in the shape of a four-leaf clover, using a small piece of peel for the stem.
    - Freeze for 4 hours until firm and ready to servce. Let sit at room temperature for a few minutes before serving.

    green tea ice cream.
supposidly there are green tea powders (at asian markets or a nice farmers market type place probably) and you just work it into home made or store bought vanilla ice cream. never tried making it myself, but in restraunts its always yummy...and green.

When I was baking lots of pies, I used to make lime pie all the time. It's only a little green, but you could make it more green with food coloring. It's basically condensed milk, egg yolks, lime juice, and lime zest. You prebake the crust and then bake the filled pie for a little while longer. (I've never made it with a graham cracker crust. Do you have to prebake those guys, or are they no-bake kinds of thingies?) You could put merangue on top, or I usually just serve it with fresh whipped cream. You could make that green, too, I guess.

Honestly, I think I'd just make shamrock-shaped sugar cookies or make cupcakes with green frosting.

You could make a green velvet cake -- just follow any red velvet cake recipe, and use green food coloring instead of red.
