    i just made the best mac 'n' cheese

    on a whim last night--- even though it's already hot-as-hell and humid as all get out deep in the heart of texas i had a mad craving for some mac'n'cheese last night (it probably helped that it was 'chilly' and overcast, etc) anyway. i wanted the good stuff. no powders. no boxes. though i can admit i'm not above k-r-a-f-t on occasion. anyway. i used 1 - 2 TBS green curry paste, 1 can lite coconut milk, about 1 - 2 cups mild cheddar (mix of vermont white and plain ole bordens brand), and a little knob of butter. i melted it all together in a double boiler, poured it over a big pot of cooked elbow mac, topped the whole thing with more shredded cheese and crushed (and i mean pulverized) tortilla chips and baked it for about an hour. oh. my. god. so f*ing good i just wanted to share.

    I have never thought of putting coconut milk in mac n cheese . . . hmm, I must try this, I can't imagine what that would taste like. thanks for the recipe! I love collecting craftista-tested-and-approved recipes. :)

    That sounds absolutely delicious!! I'm just mad that I already had dinner as I have all of those ingredients and could have made it.
