quick question about parmesan (Fresh)
How long can you have a triangle of fresh parm in your fridge? unopened??
I always heard that fresh is >>>>> then the jarred kind you get at the store so I bought some to grate.. but then have not had time to use it yet

I was wondering the same thing just today! I have a fresh triangle I haven't used yet and wanted to make portobella pizzas for dinner, but don't know if the cheese is ok still. Too funny.

it lasts for months, i think. keep it cold and dry. if it does grow mold, you can just cut that part off (and usually a little beyond the visible mold).

exactly. you can keep it until the wedge is too small to trim the mold off of.

keep it tightly wrapped so it doesnt dry out!

You can also put the rind in soups and stews for some amazing flavour. Just take the rind strip out before you eat.

i kept a wedge (unopened) in my fridge for probably three years--i opened it up, and it was perfect! better in fact than the canned stuff, and it lasted longer! i kept it in an airtight container, so i just trimmed off any edges that got moldy. don't tell my husband though--he'd be mortified if he knew it was that old!!!!!

i wrap my pieces in the glad press and seal wrap. this keeps it from getting moldy for longer. i've had my current piece of parmesn for about 6 months. no mold yet at all. periodically, if i've been unwrapping it a lot, i just use a fresh piece of wrap. i love that stuff!

i worked in a deli for a while and all we did to the cheeses once we opened the wheel was wrap it in cling wrap tightly and keep it cool. if any mold that does grow on it (not too much gets on parm) just scrape it off.
i personally think that the older the parm gets the better it tastes. same with guyere. mmm.... parm.
