    bread question

    I would like to make some homemade focaccia, but don't know when I should knead in the rosemary. Should I do it with the first knead? Or should I wait until after I've punched it down?

    (I have very limited experience with bread making, and don't have a bread machine.)

    Either way is fine. You can also wait until you've rolled it out and are ready to put it in the oven-- use a wooden spoon to put indentations on the surface of the bread, spread a thin layer of olive oil over the top, and then sprinkle on the rosemary.

    Focaccia? Oh, I haven't had that in a long time. I'll have to make some myself.
