black bean quesadilla
Hi All
Hubby and I had a black bean quesadilla at a place called Cadillac Lounge in T.O. He LOVED it. Which is great because this is one way for me to get him to eat healthy(ish) food.
I'm looking for a recipe. Problem: He tolerates salsa, hates tomatoes and all vegetables. The recipes I'm finding have all the good stuff I like that he won't eat :'(
Is there a way to make it more exciting than just beans and cheese without turning him off?

do you eat meat? you could fill it with cheese, chicken and black beans! does he mind hot? add jalepenos!

My secret ingredient is cream cheese.
You saute some onions and things - and then add the (drained) black beans to the pan. Then put slices of the cream cheese and stir until it's blended. Then toss in some cilantro once you've removed it from the heat. I always add a can of ro-tel tomatoes to the beans (before adding the cream cheese). But if he doesn't like that, you could always saute some red bell peppers as you're cooking the onions.

Those both sound like great ideas! He loves (our version) of empanadas, so these are great solutions.

That sounds SO delicious! I'm definitely going to have to try that.
