Isn't it a very time-consuming process? Anyway, I think that craftychica's your girl......

Oh, man, tamales. You might be able to tide your hunger with the ones at Trader Joe's in the meantime...

I can't believe I thought my life was complete before I tried tamales.

ive only made tamales 2 or 3 times in my adult life, and it is labor intensive, as i was warned.... but its sooooo worth it!

its super fun to fill them with all different things/combinations. heres what ive put in tamales as of today: vegan cheese, soyrizzo, olives (black and green), jalapenos, chipotle peppers, sauteed onions, salsa, peaches, pinapple, rasins (fruits with cinnamon sugar for dessert). probably more but im forgetting.

but back to you needing a recipie. i cant remember the exact ratio of water to masa. im in japan right now so i cant call my friend who i make tamales with. i think we used the recipie on the back of the package. the first time we had to kneed it forever! supposidly your supposed to kneed untill a ball dropped in water floats. we did it with and without and it tasted pretty much the same.

if your still searching for a recipe in a week when i get back ill mail you the specifics. i just wanted to express my excitement in tamale making.

thanks! if all it takes is the read the back of the masa bag, then i ought to just give it a try. i guess i wanted a recipe laced with tips and hints.... i don't mind the labor intensive part.

Try checking out cookbooks by Rick Bayless (I'm not sure of that spelling though). He specializes in authentic Mexican cooking and I know I've used his recipies before with great success.

Tamales are LOTS of work, but so worth it. I think I'm getting the urge myself....
