    Red face One dish ideas?

    Hello,

Does anyone have any quick and easy one dish meals? Between work and school, I do not have much time to cook.

    Any ideas are appreciated.

    Welcome to the forum!

Is there anything in particular that you like maybe more than something else - hamburger makes a good base in most casseroles or crockpot meals.

There are several cookbooks that give simple crockpot meals that can be started in the morning or before you leave the house and be ready when you come home...

I have a crockpot, maybe I should start using that more.... If you or anyone else has any favorite crockpot receipes, please share! In particular, chicken receipes?

How about a good stew? I always start with a vegetable or chicken broth for a base, then add whatever veggies I happen to have on hand. Mostly carrots, celery, onions, potatoes, even tomatoes makes a good soup. Then you can add whatever meat you have on hand, along with your favorite spices or herbs. Throw it all in the crockpot, cook it all day on a slow heat and by dinner time you've got something tasty.

    Chicken Noodle Casserole
    4 Chicken Breasts
    1 (8oz) Package Egg Noodles
2 Cans Cream of Chicken Soup
    1 Cup Sour Cream
    1 Stick Margarine or Butter
    1 Tube Ritz Crackers, crushed

Cook chicken and cut in small pieces. Cook your noodles in the broth from the chicken. Mix noodles, chicken, Cream of Chicken soup, sour cream, salt and pepper. Pour into a baking dish, cover with crushed crackers, and pour melted butter or margarine over casserole. Bake 30 min at 400

    Chicken Delight
(This can be made for as few or as many people as you're feeding since you wrap each chicken breast separately)

    Aluminum Foil
    Chicken Breasts
    Yellow Squash
    Zucchini
    Spaghetti or Marinara Sauce
Shredded Mozzarella or Italian Blend Cheese
    Parmesan Cheese
    Salt and Pepper

Place chicken breast on its own piece of aluminum foil and add salt and pepper. Cut up your squash and zucchini into bite size pieces, and lay as many of both as you would like on top of the chicken. Pour Spaghetti sauce over your chicken and veggies. Generously sprinkle shredded cheese and then parmesan cheese on top. Wrap in foil loosely enough so that the cheese won't get stuck to the top, but sealing both ends well. Place on cookie sheet and bake in the oven 30-35 min at 350

We do crockpot meals all the time. Usually just get some little nugget potatoes, baby carrots, sweet onions, a few rosemary sprigs put them in the bottom of the crock, take a plump beef or pork roast cover it with flour, salt and pepper, quickly brown it in frying pan, put into crock, cover all with mushroom broth, set on low and go to work. When I get home I pour all the fluid into a pot and thicken it with four to make gravy and voila! Dinner is served.
