Using polyurathane on foods for decorations?

I've been having some ideas to use certian candys for decorations in a project. Has anyone ever used a sealent on foods before? I wouldn't be using things with a lot of moisture. Ther is a guy whose work I've seen on the net looks cool and he uses limes.

I haven't done anything like that but it sounds very interesting. I hope someone replies so we can find out.

Visit this website, they use resin-but I really wanted something you can paint on to preserve.
