I tried South Beach but by day three I was starting to feel really sick so I stopped it. My parents have both done the atkins and lost about 40 pounds each. They bought a steamer and steam veggies every night with their dinner. I'll have to get the recipe from them but they found a really good Italian chicken recipe. I think it's dry italian dressing mix, parmesean cheese and back it 35 minutes on 350 but I'll double check with them.

There's a nice grilled honey chicken recipe I tried a few times.. Marinate chicken wings in soy sauce, olive oil, lemon and pepper for 1 hr. Grill chicken for 6 mins on each side, then brush on honey and grill for another 2 mins each side. Serve immediately. A good grill pan is key.

Post Subject: Baking instructions.
I realize higher elevations cause differences between bake times but lately when I follow a cookbook's directions for baking time, at the said degree, I over cook. For example, I had a chicken recipe that said to bake for 2 hours. My chicken was like rubber, and very dry. Then I worry if I cut the baking time and just pull it out when the meat is cooked that the recipe won't taste right. Does anyone else have this problem?

It's been a slow reading month here, too.
My big read this month was a doozy, though- "La Bonne Cuisine" by Madame E. Saint-Ange. first published in 1927, it was the French 'Joy of Cooking'. Julia Child read it when she lived in France, and it inspired her to become a chef. I can't wait to try the recipes. what I've learned so far is that in 1927, people ate a lot more butter than they do now- but they also ate fresher food straight from the farm in much smaller portions. Her chicken recipe is supposed to feed 6 people, and she's not using anything near a Purdue Oven-stuffer.

Salmon or any light white fish. Season with salt, pepper and any seasonings you wish. Place it on aluminum foil and make an open pouch. Squeeze fresh lemon juice and seal up the pouch. Grill until cooked and fluffy. Grill up some tomatoes when the fish is almost done.
Crispy vegetables and tofu are great cooked this way as well. Substitute the lemon juice with butter.. Yum..!
Grilled chicken recipe..
Marinate chicken wings 1 hour or overnight in 2pt sherry, 2pt soy sauce, 1pt olive oil and garlic. Grill for 6 min each side. Brush on honey and grill for 2 more min, do this on each side.
Corn on the cob is fantastic grilled as well. Just slap on some butter.

i made the very first yummy meatloaf i have ever had! it included ketchup, worsh. sauce, mustard, garlic, seasoned bread crumbs and...brown sugar! who would thought? instead of making it in a meatloaf pan i made it in a metal brownie pan (so it would cook faster) and it was soooo flavorful and yummy. ususally i hate meatloaf.
later this week will be the cream apple cider chicken recipe i got off of elf chick (i do believe). soooo yummy and unique!
