We made boogers on a stick, which were a hit with our nephews.
We tinted melted cheez whiz with green food coloring, then twirled thin pretzel sticks in it and put it on wax paper to let the "cheez" harden.
Also, we made a graveyard scene - chocolate pudding for the bottom, with crushed oreos on top, with gummy worms throughout, and mint milano cookies for tombstones and cool whip blobs for ghosts.
Holy crap, my halloween recipes are so unhealthy!! (But so yummy)

I'm not sure what kind of diet your Dad has to follow, but I'm diabetic and so are my parents and we love these (very easy) recipes
Chocolate Moose
large box sugar free chocolate pudding
large container fat free cool whip
Use skim milk to make pudding according to directions and then add the cool whip.
Banana Pudding
large box sugar free banana pudding
large container fat free cool whip
Nilla Wafers
Bananas (optional)
Use skim milk to make pudding according to directions then add cool whip. Add Nilla wafers (I use about half a box) You can add sliced bananas but I don't because bananas have a lot of carbs in them plus the brown bananas the next day gross me out.

When I was little we used to make dirt cups, a variation on dirt cakes. It's basically the same ingredients layered in a cup: chocolate pudding, crushed oreos, whipped cream, etc. Then we put gummy worms on the top and kept them in the refridgerator. Easy to make, very tasty.

This was probably the best Thanksgiving I've ever had, foodwise, which may be kind of vain because I made most of it. :)
Here's what we had:
Turkey ala mom: I'm a vegetarian, but everyone seemed to like it.
Stuffing ala me: My first successful attempt at vegetarian stuffing. Sooo good!
Roasted garlic mashed potatoes ala me: Fabulous
Cranberry sacue ala me: Amazing
Sweet potato casserole ala me: Topped with brown sugar and coconut... mmm!
Cheese potatoes ala me: Deliciously fattening, as usual.
Green beans sauteed with garlic and onions ala me: Very good
Peas ala the microwave: Filled with delicious pea-ness
Salad ala me: Romaine lettuce, toasted pecans, apple, and big fat hunks of bleu cheese. Make it for every holiday and it's always awesome.
Rolls ala the grocery store: Because it's not Thanksgiving without bread that no one eats.
Pumpkin pie ala me: Every year I get convinced to just buy one from the store, but not this time buddy! And boy, was it good!
Better than Robert Redford cake ala my mom: I think everyone has a version of this recipie. Crust, a layer of sugar, cream cheese and Cool Whip, another layer of chocolate pudding, and a layer of Cool Whip. Good stuff.
Goose liver ball ala my mom: We forgot to set it out, so who knows? From past experience with goose liver balls, I imagine it was very good.
All this and only four people ended up in attendance. Oh well--more leftovers for me!

If you can't get used to the soy milk taste, you could try eg rice milk or oat milk, or make your own from sesame seeds and water (I'm sure there are recipes online somewhere).
I personally think soy milk tastes OK but it's a bit "thin" (could depend on the brand though); sesame milk tastes more like cow's milk in that sense (plus it contains a lot of calcium and magnesium - so that's very good). Oat milk is OK too but also a bit watery and tastes like oats (duh), rice milk I haven't tried.
But then I never really liked cow's milk, so I don't eat a lot of foods that require milk products. Ie I only use eg soy milk in pancakes and the like, and then you can't really taste the soy anyway. :-)
There are a lot of cookbooks about milk-free diets - perhaps you could check a few out from the library? I think most of the vegan books are different from the non-dairy ones (I mean in the sense of what substitute products they recommend) so looking through a lot of different books (and websites) could be useful.
***ETA: aren't there soy products fortified with calcium? There is a European brand that makes soy milk with calcium, sweetened with apple juice, and it's great as far as soy milk goes. They also make a soy yoghurt that's actually good (I liked it better than regular yoghurt in fact - but I can't eat yoghurt anymore because it gives me migraines) but I guess it's only available in Europe.
KnittyMomma, my niece was allergic to milk protein too when she was little, but luckily she grew out of it ("luckily" because things are easier without allergies, not because I believe that dairy is necessarily good for you).

Here and here are two recipes for sesame milk. There are many more varieties though, I think the recipe I used was one part seeds to two parts water.
The European brand I'm talking about is Provamel/Alpro Soja (I couldn't remember its name the last time I posted), their Soya Yofu (soy-based 'yoghurt') is great. They also make a chocolate pudding-type dessert which is OK too. That probably won't be useful to most of you, but I thought I'd throw it out there if there are any Europeans reading this thread...

del - those are really interesting comments. esp about having to drive there. it seems like a costco trip takes up a whole morning, with the driving there, parking, loading the car back up, etc.
i do love costco - i have friends i go with as i'm only shopping for myself, and have to share storage space with roommates. i've gotten some fabulous deals on stuff i couldn't afford but wanted.
sun-bear - your comments on not conserving what you eat are kind of my argument against costco.
if i have enough chocolate pudding, sure, i could eat it when ever i wanted to, but why is that a good thing? i do think it encourages more consumption. like if i have twelve jars of dishsoap, will i stop diluting it because i don't have to worry about making it last?
last time i was there, i got a case of soda. i don't drink soda much, so it lasted a long time, but really, if i didn't have it, i would've only had maybe a six pack i bought from the local store.
