Post Subject: Veggie Thanksgiving Entrees
Stuffed Pumpkin!
One recipe is to score the inside of a large pumpkin with a knife and marinate it with tamari.
Then fill the inside with layers of:
White Rice (already cooked!)
Steamed cauliflower & broccoli
Wild rice (already cooked!)
sauteed bell peppers & onions
and grated cheddar cheese (or any other cheese)
Put it in the oven for an hour (or more?) at 350, until everything's nice and hot.
It's simple, straightforward, and very festive. It's nice to have a big "centerpiece dish," and it's "normal" enough that many folks who eye seitan or tofu with suspicion will just treat it as another side dish and eat some too.
Another stuffed pumpkin recipe I've been making this year is with mini-pumpkins (I usually make it with 6-8" small pumpkins). The link to the recipe is below, but I'll outline the basics:
Clean the pumpkin & rub a little salt & pepper on the inside
Fill with a pre-tossed mix of very dry bread cubes and grated gruyere or swiss cheese.
Pour a couple of tablespoons of milk in, nutmeg mixed into the milk if you're that kind of girl.
Put the top back on.
Wrap in foil.
45 mins - 1 hr at 400-450 in the oven.
Voila!
This one is a little more sophisticated/elegant, and I find the pumpkin cooks in a lot better. The original recipe is at:

BE SURE TO PUT YOUR PUMPKINS IN A PAN IN THE OVEN. It's no fun to clean up a mess of pumpkin drool baked into the bottom of your oven.
