anyone out the cooking for wee ones? syd is starting on people food and weve exhausted whole wheat pasta, risotto and peas, basically the only things he'll eat so far (10 months). any one have some clever ideas that can double as food for steve and i? i'm not that fond of cooking two different dinners every night.....

i have so many recipes that i have created or been given. and since eating this way i have managed to lose 16.5kg which i think is over 30 pounds (2.2 pounds = 1 kilogram).
My favs are hoisin chicken, herb and chilli fish, chicken fried rice, roasted vegie salad, seafood laksa, spaghetti and meatballs, pumpkin and parmesan penne, mushroom risotto, chilli beef, vegie thai red curry and warm thai chicken salad.

i actually took a cooking workshop called 'romantic dinner' or something like that--it was based around risottos of a few different kinds. so yummy! for a romantic dinner at home, i'd go for the butternut squash & sage risotto. or i might try some small exotic pizzas with offbeat ingrediants. oooh i love to cook (but more to eat!).

What do you make when you're trying to cook a "fancy" meal or have a romantic night at home?
The recipe below (which, I am embarrassed to say, I got from a package of Athenos feta!) has become one of my standbys for when my partner and I are having a romantic night at home but I don't necessarily feel like going all out in the kitchen:
Mediterranean Chicken
2 boneless, skinless chicken breasts, cut in half
1 red bell pepper, finely chopped
crumbled feta to taste
salt and pepper to taste
juice of one lemon
dill (dried)
Preheat oven to 350. Arrange the chicken breasts on a baking pan. Sprinkle with a little dill, salt and pepper, and half the lemon juice. Bake for 10 min. Take the chicken breasts out of the oven, cover them with the red pepper, the feta cheese, and then more dill and the rest of the lemon juice. Cook for another 25-30 min. Serve with some form of starch (roasted potatoes, rice, risotto, or couscous) and a green salad. Add some red wine and candles and you've got insta-romance.
For nights when we do feel like going all out, we usually include some sort of elaborate Turkish pastry involving phyllo dough. My partner makes the world's best baklava.

my family used to have christmas eve dinners with our neighbors, which brought up the total people to around 12-15. she would just make a large lasagne (or two) maybe one with beef and the other with veggies. maybe with some risotto on this side, a salad and some bread. it's not very traditional but it was super easy for her to prepare most of it early then throw it in the oven so she can spend time with her guests!

Oh crap, I should make something for dinner.
I guess I'll pick up a pre-roasted chicken so I can boil the leftovers for risotto on Friday (Thursday is eat out before orchestra night) and maybe I'll roast up one of the acorn squash? I wonder if I have any potatoes hiding in the cupboards...
This is the problem with going out of town, I guess.

mmmmm. anything by NIGELLA LAWSON is fabulous. her recipies are complex and full of flavor but not too difficult to make. i can't remember which book it's in, but her recipe for lemon risotto is always in rotation in my kitchen! happy feasting!
