It's that time of year when I could eat a different stew or soup everyday. I was wondering what some of your favorites are. I think I've posted mine before, Chickpea artichoke heart stew, but here it is again. It tastes and smells like a beautiful fall day to us!

*Chickpea and Artichoke Heart Stew*
4 Cups H20 or stock (chicken or Veggie is fine)
2 Med. onions(chopped)
2 garlic cloves (minced)
2 Tbs. olive oil
1 tsp. tumeric
1 tsp. sweet paprika
4 med. red potatoes 1/2" cubes
1 sprig rosemary (1 tsp.dried)
5 leaves sage ( 1 tsp.dried/ground)
1/2 cup pureed sweet potatoes ( i've used jar baby food...works great!)
3 cups drained chickpeas (2- 15 oz. cans)
1 1/2 cups drained quartered artichoke hearts (14 oz. can)
salt and ground pepper to taste

toppings:
lemon wedges
grated parmesean

Heat stock or water in a med. sauce pan to simmer. In a large soup pan sautee' onions and garlic in oil for about 8 min. Stir in tumeric, paprika and sautee' 1 more min. Add in potato, other herbs and heated stock- cook about 12 min. Stir in sweet potato, chick peas and artichoke hearts. Remove rosemary sprig, add salt and pepper to your liking and return to a simmer. I like to let it cook for a while after this, up to 2 hours. Serve with lemon wedges and top with parmesean cheese.

I like:

-- roasted butternut squash soup (tasty -- lots of roasted garlic and apples!)
-- curried sweet potato soup
-- french onion (au gratin style! this recipe is deadly!)
-- white bean with roasted red peppers and pancetta.
-- carrot with dill pesto.

ooo, can you post your roasted butternut squash soup recipe? I have a roasted butternut squash soup, but it doesn't include apples and I would love to add all the apples I have lying around!!!

I love soups. I am hoping to buy myself The Soup Bible next week for my birthday. My 2 favorite soups are potato and cheese (very versitile) and the other is Black Bean.

The Potato Cheese Soup includes:
potatoes -how many depends on how much you plan on making but figure 1-2 potatoes per person for one serving.
water or stock. Enough to cover potatoes
milk
sea salt & pepper
Cheese

extras: Bacon, sausage, broccoli, carrots, ect.

Cook the potatoes until they are soft. Drain any extra liquid into a bowl. Blend the potatoes or mash them with a little milk or the exta broth (if you want milk free) until it is soup consistancy. Add cheese (any kind you want) and any extras you like.

Black Bean and Cheese

This soup is very easy. One can of Black Beans pureed with a little chicken broth and heated on the stove. Add plenty of cheese, salt and pepper and enjoy.

French Onion Soup (modified from an Alton Brown recipe)

10 medium onions
1 small bottle Calvados (375 ml)
1 bottle dry white wine (I used Gewurtztraminer)
1 box Kitchen Basics Chicken Stock (or 4 cups of fresh stock)
1 box Kitchen Basics Beef Stock (or 4 cups of fresh stock)
bouquet garni
salt and pepper
1/3 stick butter

Melt butter in a large pot. Saute the quartered and medium-sliced onions in the butter until they are completely translucent and soft, about 30 minutes. Add 2 cups of wine and simmer on low heat until the liquid is a little thick and most of it has evaporated. Then add your stocks and bouquet garni. Simmer for about an hour. Add about 1/2-3/4 of the Calvados. Cook for another half hour. Serve hot: put a piece of French bread in a bowl, pour the soup over it, and top with a slice of Swiss or Gruyere cheese. Run under a broiler until the cheese bubbles. Let it cool down a bit before eating. Makes enough to store inthe freezer, unless you are having over ten people or something.

I love soup in the fall/winter! Unfortunately, I have a very picky husband who doesn't really like most soups. Usually I just make a smaller batch and heat the leftovers up for lunches. I just made a roasted potato and garlic soup last week that was sooo delicious. I'll post the recipe if anyone wants it.

My favorites are Leek & Potato (on my blog), 15 Bean Stew, Purple Chicken Noodle Soup (on my blog), and White Bean & Sausage Stew in Sugar Pumpkins. Yummy! I love fall, and I think it's mostly because of the soups!

Roasted Potato and Garlic Soup

4 medium red potatoes
1 medium onion, coarsely chopped
2 tsp snipped fresh rosemary or 1 tsp dried rosemary, crushed
1 bulb garlic
1 Tbsp olive oil
1 14oz can chicken broth
1 Tbsp all purpose flour
1/4 tsp pepper
1c half and half or light cream

1) Peel and cube 2 of the potatoes. Cube remaining 2 potatoes, leaving the skin on. Place peeled on one side of a baking dish and the unpeeled potatoes on the other side. Sprinkle onion and snipped rosemary evenly over all. Peel away the dry outer leaves of skin from bulb of garlic. Leave skins on cloves intact. Snip off the pointed top with scissors, leaving the bulb intact, but exposing the cloves. Place the garlic bulb, cut side up, on top of the potatoes. Drizzle olive oil over all. Bake, covered, in a 400 degree oven for about 50 minutes or until garlic cloves feel soft and potatoes are tender. cool slightly.

2) Squeeze the garlic bulb to remove the paste from the cloves. In a blender or food processor, combine the garlic paste, peeled potatoes, about half the onion, half of the broth, all of the flour, and pepper. Cover and blend until nearly smooth.

3) Pour the pureed mixture into a medium saucepan. Stir in the unpeeled cooked potato, remaining onion and broth, and half and half. Cook and stir over medium heat until slightly thickened and bubbly. Cook and stir for 1 minute more. If necessary, stir in additional half and half to make the soup desired consistency.

Makes 5 cups

I am glad that somoene started this link - I just discovered that I love tomato basil soup! does anyone have a great recipe for this?

I think my favorite soup/stew for this time of year is lentil, and i also love cream of broccoli. i am very picky when it comes to soup, so if anyone can help out with the tomato basil soup, that would be great.

A couple of weeks ago I made Indian Summer Turkey Chili from Rachael Ray's "30 Minute Get Real Meals"....it was awesome, delicious and incredibly easy!!

It's not exactly a soup or stew...but equally comforting :)
